Fresh fish...

Where do all the Sushi restaurants and fine dining restaurants get their fresh fish in Baton Rouge?

I've been looking and looking (I guess I'm not a good "looker")

New Orleans Fish House and LA Seafood Exchange are 2 local wholesale purveyors.

Call Tony’s on a Monday. Order your fish and the grade. Pick it up on Friday.

A lot come from Jensen Tuna. Not all of it is Fresh. A lot are previously frozen.

Pretty much all is frozen. Salmon by law or FDA has to be and not many places would take a chance of serving parasites. Which means they can get their fish from anywhere.

Pretty sure the FDA recommends but does not mandate that fish eaten raw should be frozen first

Correct. But I had to make sure that dick posted above you had something to say since he stalks me. Be a waste of time if I didn’t give him a bone once in awhile.

It’s mandated in a few states. Regardless most all sushi is frozen. He can find his own links.

Agree with other posters who've stated that the vast majority of fish served at sushi restaurants is defrosted, previously frozen. That's not necessarily a bad thing: as mentioned, it kills the parasites in salmon (which can and do infect humans bc they begin their lives in fresh water), and properly handled, quickly frozen fish is usually far superior to fresh stuff that is quickly aging as it makes its way to you.

So much of the fresh stuff landed in LA goes to large wholesalers via Atlanta & NYC. We in LA just won't pay the $$$ that other markets will spend on fresh fish.

It is a non-profit organization which helps fishermen sell directly as wholesale and retail.
