Finally got a WSM. What do I need to know?

My local big box retailer was running one heckuva sale so I pulled the trigger.

Any tips, tricks, “must do’s,” “never do’s” anyone wants to share?

I use newsprint to seal the side door.
Get a chimney starter.
If you have a wooden deck, get and aluminum oven liner to protect the wood.
Don't rely on the built in thermometer.

Get a bbq guru for temp control and some flame proof tape. Then you can set it and forget it.

This is actually pretty important. Most people gloss over this and really sets back the cook.

ETA: I own a BBQ Guru fan and controller and it makes smoking effortless. I also placed a clay saucer in the water pan and covered with foil in lieu of using water as the het sink. Has worked well for me countless times. I've never added gaskets or door accessory as over time the grease buildup from smoke has caused a very nice seal. Trust in the Minion Method!

Does anyone find it necessary to "season" the WSM? I see Harry Soo recommends it but others don't, including the people at The Virtual Weber Bullet forum.

I have some chicken parts I was keeping to make some stock. I could use them as a "seasoning" agent.

I already know to line the water pan with foil.

Google the "Minion Method". It will run for 10-15 hours on one load of charcoal without any adjustments.

I picked up two 18 inchers at lowes for 160.00 each.

For me, these two things are a must have.

Has any tried the afternarket "heat shields" instead of the bowl?

Lately I've been not evening putting the bowl in and only using the top grill. Thinking with one of the shields I could use the bottom as well.

Try this instead:
place a terra cotta plant saucer in the water pan, that fits snug, and cover with foil in lieu of using water for the heat sink in your wsm.

I'm not worried about a heat sink, just want something the keeps the direct heat off the bottom grate. The bowl sits too low to the coals making it harder to add charcoal during the cook.

That’s an insane price. I thought webers only sell at msrp.

Sometimes in fall/winter, the big boxes will mark down grills and BBQ items (likely to make room for Santa displays). You just have to be there at the right time. I got a steal on a Weber Genesis one winter.
