Filet help needed

I’m about to do something that kills a little bit of my soul. I am grilling some fillets tonight and am cooking one for a family member I don’t usually grill steak for. Because this person has no idea what an appropriately cooked piece of meat is.

So- I am about to cook a perfectly good filet to medium well-well done. What should be my strategy here? I am going to cook them hot and fast at about 600 on my egg. I am also grilling some veg on my gas grill. Should I cook the one I am ruining on the gas grill first and then just hit it with high heat to sear? Or should I sear and then cook at lower temp on the gas? Should I butterfly it so the outside doesn’t dry out? I am in uncharted territory here and don’t want to ruin it more than necessary.

Get them a chuck eye steak and let them know that you will not ruin a filet

"accidentally" cook it medium rare and then make them mircrowave it the rest of the way.

"Butterfly" it, and cook it the same time and temp as the rest of your steaks so they are all done at the same time.

Cook it medium well but top it with a compound butter so it won't taste so dry.

For heaven's sake. Cook the beef the way the guy wants it cooked. He is a guest at your home and deserves to be treated with respect. Hopefully he would cook your rare beef properly if you were at his house.

It will be easier to cook if you butterfly it and cook it that way. If you do that, it will probably cook to his preference in the same time as your other steaks.

For those who don't like what I have said, I eat my steaks medium rare, towards rare, but if you eat at my home, I will cook your steak to your preferred doneness, because you are my honored guest. Hopefully you won't ask to do politics while you are in my house, because I don't do politics and will tell you that.

I plan to. That was the pint of this thread. I’m trying to figure out how not to really ruing it.

Yes. Whatever your taste is, you shouldn't impose it on anyone else, and neither should they.

This. I too can't understand the whole "I need mine well done" attitude, but there are more than a few unknowing eaters out there.

Grill it the way they want it. My MIL always wants her ribeyes well done when she comes over. My wife prefers med-rare, I shoot for medium on mine. I just have my MIL stand there and tell me when it's done to her specifications.

I usually reverse sear my stezks, and the beauty of that is I just throw a MW steak on the grill about 15 minutes before my MR steak, and then sear them at the same time. No butterflying needed.

MD always the voice of class and reason. Would you give me a ruling on my behavior as an honored guest at my first cookout with my wife's family.

They were cooking ribeye steaks and my wife's uncle was manning the grill. This caught my attention in that I noticed he was cooking them to well done.

Fortunately the grill wasn't very large and he had to make them in batches. I saw my opportunity and offered to cook the last batch for him, which he accepted. I picked out a nice steak for me and after the others were almost done I tossed my steak on and cooked it to med rare.

After we all were finished eating, I heard my wife's uncle and her dad complaining about the steaks being tough and that they would have to talk to the butcher about it. My steak, was fine.

MD, was what I did acceptable behavior for an honored guest? Should I have just sucked it up and eaten an overdone steak?
