Field run crawfish

I went looking for select crawfish this past weekend. Called a place on the recommendation of a friend, they had them at $2.25/lb. Get there an hour later, nope - none to be had, but we'll sell you field run at the same price. I'm not so sure it was a case of bait and switch as much as it was the old lady running the front of the store that was clueless. I've never heard of field run.
They tell me they are just as good as select, just a little smaller. Huh? I should've walked then but I had no time to go hunt down select so I bought them. Upon opening it looked like a regular sack of crawfish, nothing special. They were clean and the shells weren't hard but I have my doubts that it was due to their field run status.
So the question I have is; I live in the New Orleans area and have never heard of crawfish designated as field run. Is this a new category to charge a premium for the product or has this term been out for a while and just now making it to retailers in the area? A quick google search tells me it's just another size designation. Little did I realize they are sizing crawfish just like shrimp - count per pound.
Thankfully I can't see them becoming like crabs who's sizing has become ridiculous with as many as 7 or 8 different sizes and prices to go along with them. Growing up there were only 3 or 4 sizes, or just by the hamper.

Field run shouldn’t be the same price as select. With selects they are supposed to actually go through them and separate the bigger ones and sell them As select. Field run they are just throwing what they get into a sack and you get what you get.

Field run are fine but should be cheaper. I prefer a medium crawfish vs selects.
Often times field run are field run minus selects and that is not acceptable, those should be peelers or smalls.

Mediums do always seem to peel better and they seem to take the seasoning better than selects. Plus you get more mediums per pound.

I’ve never understood why people want all large crawfish. I don’t want small ones, give me straight runs with all sizes mixed in every day of the week.
Crawfish grow un-exponentially. Their heads grow faster than their tails so as they get larger, your meat yield decreases. That means you’re paying for more shell than tail.
“Select” crawfish is the biggest swindle on the Louisiana man since Aids needles in your arm at Mardi Gras. “Select”, lmao. Whoever thought of calling large crawfish select and upcharging them is a freakin genius yet needs to be shot.

Come again!? Where’s the science behind this? Don’t pass anecdotal for fact.

Learned it in my shellfish processing class by a professor specializing in shellfish.

The crawfishermen are obviously worried that the squares are catching on to their generations-old game of frickery where the prices have constantly skyrocketed, no matter whether rain increased, decreased or remained constant.
I imagine they'll be offering "free range" and "pond raised" crawfish at a significant premium in the near future.

crawdads are everywhere in TX restaurants now as well as live at HEB stores. it's never been easier to find them cooked or live. 5+ years ago live crawfish had to be ordered ahead of time from seafood shops. now you can walk into HEB and grab a sack, they don't take orders. lots of stores setup commercial boil rigs outside the front door & sell by the pound, too.
has production increased accordingly? i have no idea.
don't forget non-GMO & organic. made in the USA, nobody wants that crap from china.

Field run just means they aren't graded. You'll have large, medium, and some small in there. I had a couple sacks of field run a few weeks ago and they were all medium/large.

Exactly. It’s what I always try to tell people when they wonder why prices stay inflated. Demand is so much higher now in Texas and they will pay a premium.

They really haven’t in the last five years or so.
And where they have, it’s generally because of major demand in other states and your venues are probably charging much more to eat onsite

These threads always blow my mind. I’ve never ordered or been around any boil/crawfish eating venue where people differentiate the sacks by size or “select” or whatever.

Really? You’ve never had people tell you they ordered select? It seems like the first thing anyone asks when you tell them you got crawfish is “How was the size?”

Crawfish use to be either Pond or Spillway.
Crab docks have 4 grades
No. 1, large full male, over 6 1/2" point to point
No. 2, male crab, full, 5 1/2"-6 1/2" sometimes a could be a no. 1 with a missing claw or a couple missing legs.
Females, a full female crab over 5 1/2"
Factory. Male or female 5" and up, Skinny or decrepit looking

They are differentiated by size in every step of the supply chain
You have peelers / field run/washed-graded - which is usually select

Daughter brought 10 lbs of jumbo crawfish she bought somewhere near Mandeville last Saturday (4/29). They were huge, cost $4 / lb, and were fantastic.

Crawfish are plentiful and flooding the market right now. The fishermen are being forced to grade them right now in the Atchafalaya spillway. Small ones are going for .35 cents to peel and the rest are being sold for $1.25.
