Mushrooms with butter and garlic. Asparagus with olive oil and fresh squeezed lemon juice. A baked potato with butter and sour cream is nice but I’d rather forego that and have a bigger steak. You have to weigh all those factors and find the right balance. But I love love love sautéed mushrooms in butter and garlic with my steak and I have a grill basket that I bought specifically for that purpose. And then grilling asparagus while the steak rests takes very little time.

Hot potato.
Peel and cube 3 red potatoes.
Boil until fork tender
Spoonful of butter in a hot skillet
Pour strained potato cubes into skillet and sprinkle with garlic salt then cover with Louisiana hot sauce and stir often until all potatoes are orange
Enjoy.

Those are my faves, but for something a little different...refried beans.

Tinfoil pouch potatoes

Sliced with onions, butter, salt and pepper and put in grill.

Loaded mashed potatoes with green onions bacon and cheese

Or those goddamn tik tok potatoes crisp square things, fricking amazing but too much prepping for me.

Also love a very simple side of mushrooms. Bare skillet medium high til they brown, add butter then salt to taste.

Shoot, when I was young and we went camping, we’d make a whole meal in tin foil pouches. We’d put meat and veggies and potatoes in there then thrown them on the hot coals around the campfire. We called them hobo dinners. They’re simple and delicious and fun for the kids.

probably grilled romaine... or a salted baked potato.

The wife has been making these sweet potato slider things. Its sliced thin (less than 1/4 inch) raw sweet potatoes with a little olive oil and baked for 20 min. Then add goat cheese and a drop of honey and a crushed pecan. Back to the oven for about 10 min. They are awesome.

I have been adding splash of tabasco as well... goes perfectly with the goat cheese and honey.

My wife does this part, but gold or red potatoes mashed or whipped or something with ranch, cheese and bacon mixed in.

And a Caesar salad

Sometimes just the Caesar salad is plenty.

The steak is what matters here.

Eta: just baking a golden potato and dumping a bunch of butter and Lea & Perrins in it is a solid option too.

Grilled romaine is sneaky good
I find it hard to wash and get dry for the grill though
