Favorite dish to make with leftovers from crawfish boil?

I have about 2-3lbs of leftover crawfish tails and a gallon ziplock of potatoes and corn.

Usually do crawfish omelettes with leftover tails, but I have enough to make a bigger dish. Maybe an etouffe and potato salad??

Whats everyones go to?

You have to remember ahead of time to save heads, but traditional crawfish bisque with the stuffed heads is hands down my favorite.

For the potatoes, freeze them for 20 or so minutes and dice them into cubes. Deep fry like French fries.

You can take a deep dish pie shell, make some rice and add your boil ingredients and bake.

Potatoes make some potato salad.

Crawfish tails and corn, make some crawfish queso, serve with tostitos or something similar. Phenomenal. It freezes well FYI.

I'm making it later today from what's left over from yesterdays boil. I watched that video a couple days ago and it looks like a winner.

Just have to watch the seasoning and I won't be adding any until it is done to make sure to not over-season it.

Oh, and someone already mentioned crawfish bisque. I make 3-4 gallons of it every spring. I'll buy one sack just to use for making the bisque and will stuff a couple hundred heads when I make it. I already have about 150 heads cleaned from yesterday's boil.

Smothered potatoes. I usually have left over corn, potatoes, sausage, onions and mushrooms. Sauté some Trinity, add a stick of butter, peel/cut the potatoes and add, cut the corn off cob and add mushrooms and crawfish. A little chicken stock and old bay and let it cook down. I get nearly as excited about the smothered potatoes as I do about boiled crawfish.

Also, corn and crawfish bisque with the leftovers is phenomenal.

Guess I’m going to have to boil crawfish this weekend to get leftovers.....

Smashed potatoes baked in oven. Forgot the real name, but mix in a boil with a little heavy whipping cream and butter, then flatten on a cookie sheet. Sprinkle top with minced garlic, black pepper, bacon bits, and small amount of shredded cheddar. Bake for awhile then broil right at the end to get the top a little crispy. OMG...

Quick update:

I finished the "After The Boil Soup" and it is fantastic. What a great way to utilize the leftovers from a boil to add to what I already do with some of it.

The seasoning was almost spot on without adding any and just relying on the highly seasoned leftovers to do their work. The use of the half & half, chicken stock and the 2 cans of Cream of Mushroom soup went a long way in taming the salt and spice of the other ingredients.

I will be making this again, and following the directions finds me with about 1 1/2 gallons of finished product.
