Mowata Store used to be my favorite about 10-12 years ago. Last couple of times I had it, it was not good. I hope they stepped it back up because it used to be damn solid.

There isnt an hour wait. They have 3 registers serving those inside and one outside. Just go inside. The line moves fast.
Billy's is my favorite.
Bourques is up there too though along with Don's. Best Stop isn't in the league anymore. It's just over seasoned boudin.

Used to really like Bourque's but I got some a couple times and there was a lot of gristle in it and it was just no good.
Their sausage is good though and their customer service for their mail order is outstanding. Hope they step the quality of the boudin up, because with so many strong competitors, serving a link with a bunch of gristle is foolish.

Bourques is inconsistent but when it's on its very good. I only buy Billy's boudin because I know I'm getting a n excellent product every single time. I agree about Bourques sausage. It's delicious.

Yeah I ordered 20 lbs from T’s and 20 lbs from another place. I still have 2 pounds left from T-boys in my shop freezer I really wanted to love it and prepared it carefully each time. Was the first time I threw cooked boudin in the trash. Simply terrible. Not attempting to bash T-boys by any means, and I’ll chalk it up to a bad batch—T-boys is better than Zummos, so there’s that

When I had my boudin run a few years ago, T-Boys was terrible. I had done a blind taste taste and I spit it out it was so bad. I thought it had gone bad or something, but based on what I'm reading now, I'm wondering if that's what it's like all the time. It just tasted foul.

People on this board like to say "there's nothing to making boudin" but you have a bad link, you never for get it.. It's like bad oysters or bad frog legs.

I went to Billy’s in Opelousas for the first time. The labels said Billy’s but the receipt said Ray’s. Is that just the name of the store?

Ray’s was a town favorite for many years before the Freys (Billy) purchased it. Ray’s Boudin was such a popular spot, with such a loyal customer following, that the Freys decided to retain the store name—and Ray’s recipe—after they bought it. Billy then screwed with Ray's recipe to make his seem better. I haven't been to the Opelousas store in a while, but at one time you could order up links of either recipe. Not sure if that's still the case. Billy's boudin is spicier and meatier; Ray’s is milder, with more rice.
