My two cents:

Tacos - no because it can be used in any of the other challenges. Doesn't need it's own challenge.
Pasta - See Tacos. We've had a pasta dish in every challenge, so far
Mushrooms - Yes
Fruit - Yes
Peppers - Hell yes
Chocolate - Yes
Mexican - Hell yes

Mushrooms would have been a "Hell yes" from me, but some on here don't like them, so I downgraded them to a "Yes".

I think ground beef would be a fantastic choice.

I made meatloaf because I was surprised no one suggested meatloaf as a challenge.

Very versatile dish that could be made with anything that flies, crawls, & swims.

The best "ingredients" are the ones that have the most versatility.

Someone suggested salmon but received an unfavorable response. This is an excellent ingredient that has a lot of versatility as well.

Mushrooms are too polarizing.

Based off of what we've had in the past, I think potatoes would recommend potatoes. There are over 4,000 varieties of potatoes & endless number of dishes that could be made from this humble tuber.

In fairness, I don’t think it got downvotes because of salmon. I think it was because he was suggesting something the OP didn’t bring up and wasn’t considering.

After careful consideration.....a few beers..... a lesson on "pasta" vs "noodles".....and Toof telling me I would lose......

To be clear, I think this includes, but is not limited to, sheet pasta/noodles, macaroni, bowtie, penne, ect.
