Eternal debate: do you season crawfish in ice chest after boiled?

Thought it was Lafayette and west but apparently it's Breaux Bridge and west

ive been to boils in Lafy and never seen this shite... have only come across it in Houston. And often. Just ignorant

I found they slack big time in the seasoning during the boil and then sprinkle seasoning on the shells

Moved to Lafayette for 1.5 years after graduating from LSU. I saw people do this there and it blew my mind. Horrific way of boiling IMHO.

A friend of mines dad is from Lafayette and seasons with hot sauce in an ice chest, but prepares them normally otherwise. In other words he seasons the water as well. I have heard of some folks not from south LA just throwing all the shite on after.

Anyone that doesn't season water while boiling just about anything is an idiot.

It's called pro boil for a reason.

Last year i started doing a 25 minute soak and then sprinkling seasoning and letting them steam for another 10.

Some of the best batches I had (out of my 1500lbs I boiled) were cooked this way.

Sometimes it doesn't hurt to blend methods!

Was hunting with a guy in Gueydan last year who poured bottles and bottles of hot sauce on them after he put them on the table. They would have been pretty good without it, but they were ruined IMO

Tony's boils in plain water and they are the best crawfish anywhere. And they will be the exact same anytime you buy them.

Yeah they were. Sucks because he got the crawfish out of his own ponds so you know he's been torturing people with this method for a long time.

Meh. Last time I had theirs, the outside was covered with seasoning and they weren't that good coupled with my hands on fire the rest of the day.
