Does the cut of your steak affect how you like it cooked?

I've eaten every cut just about every way because some hosts and I can't always get it perfect. It could be alcohol related :)

Here's how I feel at this point in my life.

I like rib-eyes rare to medium rare. The fat in them melts at lower temps.

I like strip loin at medium to medium well. Medium well has the best "chew."

I like filet, although I seldom order it medium well for the same reason.

Porterhouse usually leaves the filet overcooked.

Props to the people that like the Philadelphia blue rare. I like the flavor, but I just can't chew the raw meat.

Rare to medium….
I like a nice thick steak on the grill about 4 minutes on each side….

That's how I've ordered and eaten most of them. I just find that strips are better a few degrees hotter. I was as surprised as anyone.

I like a ribeye medium but it might be because I'm getting some serious char on the fat to get there. Everything else medium rare.

Yes, but the exact opposite of you. Fattier cuts I tend to cook to higher temps so the fat can properly render. Leaner cuts I'll eat rare-medium rare.

I probably like my rib eyes closer to medium, strips and filets I like med rare but I don’t like any of them rare.

If I’m cooking it, and get it anywhere over medium, I have ruined my own night. And if my wife tells me it’s fine I’ll ruin her night too.

Same here when it comes to beef.

Pork steaks, pork fingers, etc. are more toward medium. Cook them more toward well done and they tend to dry out too much.

Filets and sirloin (i.e. lean cuts) @ 127-128
Ribeye or loin flap @ 135

135 for those cuts will still be medium rare but the higher temp gives the fat a chance to render. A sub 130 ribeye will have way too much un-rendered, chewy fat for my taste.

A steakhouse tip is to make a cut on the strip side of the porterhouse to release it from the bone, allowing it to cook faster and more in pace with the tenderloin.
