Never heard of adding vinegar. I wonder what this does for the rice.
Sometimes I wash it, sometimes not.

I’m kind of in between the poles of this thread. I generally rinse my rice once: add extra water in the pot, agitate/swirl by hand until cloudy, then pour the water out of the pot (until I can’t get any more water out without dumping the rice). Add fresh water, cook. I find this gets rid of any large particulate matter as well as knocks off some of the starch without rinsing the rice completely clean.

ETA. Wife’s cousins works at a rice mill. He said don’t ask why but always rinse your rice.

I don’t wash it, I prefer it extra sticky

We use Jasmine rice and rinse the starch out always before cooking in our pressure rice cooker. The rinse water starts out milky white and eventually runs clear. Not a fan of sticky rice.

It definitely makes it less sticky, less mushy, and more fluffy. If you ever wanna make fried rice it's a must do.

Completely depends on the dish I am making.
It's a must in most Asian food, risotto, and nearly everything else that uses short grain rice.
