It's the same thing with ketchup. My mom still insists on putting it in the fridge even though I remind her that no restaurant is putting all of those ketchup bottles in the fridge every night.
Plus ketchup gets sweeter in the fridge. Room temp ketchup is the way God intended it to be.

I do now just because my wife likes to, and we hardly use it

The reason I posted this article is because yesterday my wife chastised me for having mayo out on the counter. I was going to mix some of it with mustard to have on hand for sandwich making. (It's also called "Lot-a-burger Sauce" at Frostop.)
I think I agree with most that cool mayo is better, but it's good to know in case you leave some out on the counter for a while.

Not sure about mayo but ketchup and mustard are good for about a month at room temp once opened. I don’t use them that quickly so they’ll stay in the fridge where they’re good up to a year
