I've never refrigerated ketchup or mustard (or soy sauce, Worcestershire, or hot sauce). Some has stayed in the cabinet for a looong time. No issues.

I'd like to know which commercially available mayos were tested. There are a lot of them out there with many different recipes.

Yeah I don't Think any restaurant does
But I agree I prefer it cold.
