I learned Cajun cooking from my grandfather and mother, but I learned many tips and methods from the following on other styles of cooking;

Batali
Florence
Rick Bayless
Ming Tsai
Flay
Chiarello
Alton Brown
A. Franklin

and yes some good desserts from Paula Deen


and probably a few others I forgot

ETA; you guys on this Board are outstanding as well with your tips / advice

Three pages so far, but nobody has even mentioned Auguste Escoffier Easily my #1 for many reasons.

My current living Chef has to be Keller. He's an all around Chef in every sense of the word. Ad Hoc at Home is an excellent cook book.

Chefs I like with awesome autobiographies that I would recommend:
Grant Achatz - Life on the Line
Marco Pierre White - The Devil in the Kitchen

Chefs that are dear to me: I grew up with instructors of Julia Child and Graham Kerr.
I can't say enough about these two persons. Child taught me virtually everything I needed to know as a pre-teen cook, Kerr also, while making me laugh.

Kenji Lopez is high on my list. The man does his homework & his recipes hit almost every time. He also has tremendous range.

Keller completely changed the way I prepare food & select my ingredients.

Jacque and Julia introduced the world to French cuisine, and without them, there’s likely no home chefs in the US.

Jose Andres is one of the nicest chefs I’ve encountered, and I’ve never had a bad meal he’s prepared.

Jacques Pépin is easily my favorite chef to watch and learn from of all time.

Marcella Hazan authored my favorite cookbook of all time, Essentials of Classic Italian Cooking.

I have a slate of YouTubers that I watch for recipes if that counts that are the following:
