Besides soups and salads...

Any recommendations? Tired of having to discard old produce.

Anything with the trinity? Gumbo, étouffée, etc.

You could always just eat it raw. It'll give you more boys to deploy to battle.

roasted celery is an excellent veggie side dish
just lightly season and roast in the oven like any other vegetable

One of my favorite snacks is a few stalks of celery and a jar of peanut butter.

You can save it to make stock.

Also you can make cream of celery soup.

I'd rather just open up a can.

I too have the issue that I buy a bunch of celery and use 2-3 stalks and then it wilts in the fridge. I can only eat so much chicken salad.

I enjoy making soups. Cream of celery sounds pretty good about right now.

I use up celery for the most part. I freeze leftovers sometimes for stock.
