Did some cooking over the weekend (pics)

Figured I'd share some of the items I made over the weekend.

Saturday: Steamed Clams (app) / crispy chicken thighs / broccoli rabe / roasted potatoes

Sunday: Ribeye / asparagus / potatoes au gratin

Bonus meal: cacio e pepe made from instant ramen (David Chang inspired)

Winged it.

I made two of those portions, so if I had to guess:

Bechamel:

1 cup half/half
1 cup whole milk
3 tbs butter
Pinch nutmeg
Salt to taste
2 cups Colby jack (ish)
1 cup shredded white American (ish)
Red pepper flakes for heat

3-4 med Yukon golds thin cut on mandolin

350 oven 45 minutes, finish under broiler with more shredded coby jack.

What's the recipe for the cacio e pepe? I'm intrigued. Looks good.

Very nice. Out of all that the thing that intrigues me the most is the chicken.

There's the cacio e pepe recipe. As for the thighs:

Season with salt and pepper
Hot pan with grapeseed oil
Skin side down for 5-8 min
Finish in a 400 degree oven

I'm going to have to try that cacio e pepe made with ramen.

I make it with regular spaghetti or linguine, but that sounds even better.

Some folks see Jesus on their toast in mornings. I can't help but see that smiley face on the piece of bread on the right.

I wonder if the inventor of the Scrub Daddy was inspired by a similar observation. "What if that were a sponge instead of a piece of bread..."
