Does anyone have a video they recommend for learning to butcher and debone whole chicken (not break down or quarter)? My butchering skills are not the greatest, but I can decently get the main carcass out including the joints. However, I always leave a mess trying to get the thigh bones out. Also, does anyone have a recommended way to get tough tendons out the legs once the bone is removed?

Most videos I've found are either from some chef working 1000 miles an hour, or poorly explaining techniques, where to hold, how to manipulate the bird, etc.

turn the thigh over, and run your finger along the meat side, you'll feel the thigh bone. make an incision along the bone lengthwise, then roll the the thigh while keeping the knife in the incision down to the bone. you'll be able to lift the bone out from one end and use your knife to cut away any meat sticking to it

its just one bone, its big, and theres nothing else attached to it

i dont bother deboning the legs until after cooking

might take you 30 minutes for your first time. just don't slice your finger off
It's all about feel and having the right size flexible knife. Pretty sure I use a Victorinox 41822 4"

The only chef that comes close to this level of execution is Martin Yan, but Pepin is the master.

"You add the ginger, lemon grass, garlic and bamboo shoots to the wok and you mix-em-um-up"

That line always killed me.

I've made my own "Turduckens" several times over the years and that is how I debone all the birds used in that recipe.

Then all the bones go in my stock pot with the requisite vegetables to cook down to make a great bone stock for later use.
