David Chang prefers seasoning on the outside of crawfish

So I have been watching Ugly Delicious on Netflix. He has a Nola/Gulf coast episode. And he raves about vietcajun crawfish from Houston and basically shite talked the traditional style of cooking crawfish. He ranted about the flavor not getting inside the crawfish without the outside seasoning.

Essentially he’s baffled that we prefer the regular way of cooking crawfish to the “Houston” vietcajun mashup.

He is a Korean American millionaire whose entire restaurant shtick is 'play on Japanese noodles'. He's a hell of a restauranteer, great chef, etc. don't get me wrong.

But this whole series is basically showing how good food can be when we make it non-authenticly.

So it's pretty absurd to take that show with anything but a grain of salt. His first job is to produce a show, his second job is to show his true intention.

Oh don’t get me wrong. He’s pushing the Asian culture and I get it. A large portion of the show focuses on immigration issues. But he basically shite talked the traditional way to cook crawfish and based it on technique and what he thought was fact

The only thing seasoning on the outside does is get that shite all over your hands and will put your eye out when you remove your contacts. I refuse to eat them that way.

The Viet crawfish in NOLA east are bland. I think they actually like the flavor of crawfish.

He's 50% correct. I've had some kick arse vietnamese style garlic crawfish at LA Crawfish here in Houston.

This is what I was saying right here. His shtict is taking traditional methods and improving upon them. He basically thinks everything traditional can be improved.

Which a big reason I would disagree is a lot of traditional methods are that way because they are time tested and proven to be great.

But part of that is all just for his show and part of it is him trying to actually improve things.

I read an article about it but haven't seen the show.

Seasoning on the outside of the crawfish (only) is an abomination. On the other side of things, I've heard of some different flavors to add to a boil that I'd be open to.

There’s a couple places here that do them well as well as one that’s absolute garbage. The Asian places in Plano are different, but good.

My grandpa only soaks for three minutes and seasons on the outside in a big ice chest

I tried to help him, but he's been "doing it this way for 40 years and everyone loves it." His crawfish sucks.

I think his point is, just because that's the way something has been done forever, doesn't mean that's the best way to do it. You shouldn't just do something because that's the way it's always done, without understanding why it's done that way. Which is a valid point, but different isn't always better.
