Just got back from Costco and prime brisket is back on sale for the above price. That is whole, untrimmed by the way.
They also have Prime N.Y. Strip for $9.79 a lb. and I picked up a 13 lb. slab of that to cut into steaks a little later today.
Forgot to add, also boneless Prime Ribeye for $9.99 a lb.

Which Costco?

Nice, good deal. Robert's has them for $2.99/lb so I picked on up on Wednesday.
Did they have Boston butts on sale too? About to head to Winn-Dixie for a meat run. $0.79/lb and $6/lb beef tenderloin.

Didn't check out the pork at all, but I'm sure you're doing better at W-D with that price.

How crowded was it? I haven’t been since Covid started. Don’t want to wait in line long.

How much is it per pound after a trim?

I got there just past 10 a.m. when they opened and walked right in, got my stuff and walked out in around 1/2 hour.
When I was leaving the line was at least 75 people long waiting to get in. I've found it is hit and miss as to when the crowds show up and when you can slip right in.

That kind of depends on how hard you trim it. The last one I got about 3 weeks ago I probably trimmed better than 3 lbs. of fat off the cap, but I trimmed it pretty lean since I was making corned beef with it.
If I was going to smoke it, I'd have left a bit more fat on the cap.

Save the fat you trim too. Either add it to your ground meat or render it down for the oil

Yeah reverse sear. 250 degree oven until it hits about 120 then slapped it on top of my chimney for about 1 minute and a half per side.

I believe the everyday price for prime whole briskets at Sams is $2.64
