Cooking Some White Beans Today

I usually use smoked sausage in my beans but I was wondering what you guys and gals put in yours.
Cooking some Blue Runner dry Great Northerns.

smoked pork sausage or tasso from Teet's or Bergeron's.. If I have a ham hock, i'll cook that down with the beans and add thyme and a bay leaf

Tasso or a big arse bone in ham steak laid over the top like a pot lid. I also have to have some cornbread to eat with it.

Chop and fry a couple pieces of salt pork. Stir in some onion, and pepper for a few minutes. Add beans, and tasso or ham scraps/bone/hocks. A good smoked sausage on the side. Cornbread is a gimme!

Ham hocks. I pressure cook them to make a stock and then cook the beans in the stock. It will change your life

I also like to simmer good smoked hocks for a while using the stock for beans. You can add whatever other meats you would like with the beans.

Beans are cooked!
I had some smoked turkey necks I decided to use for a gumbo in a couple of days. Same with the tasso so I used some Hogs for the Cause Smoked Sausage. First time using it but a taste proves it's pretty darn good stuff.
