Sometimes ham hocks, or if I'm lucky a ham bone with lots of bits of ham left on it, or smoked sausage or tasso.

The beans look good enough to eat, 'Nate!

They look mouth watering good man! I love all beans and have my favorite ways to cook each of em. I sue mostly ham or salt meat or sometimes a hock or 2 in my white beans. I find it goes well with their mild flavor. I save the heavy smoked tasso, sausages tec for other heartier beans.

I also like to simmer good smoked hocks for a while using the stock for beans. You can add whatever other meats you would like with the beans.

I made some white beans last week and threw a smoked ham hock in with them to simmer. Pulled it out after a few hours, pulled the meat off, and threw that in to simmer a little longer. They turned out great.

Looks damn good Nate. I'm like Ched...pickled pork or salt meat in my white beans. Onions, salt and black pepper...just like MawMaw used to make.
