I have a friend who hates just about every vegetable. Invite everyone over, taco bar, lettuce touches the meat, he's not eating meat after that. Says he can taste the lettuce juices

I used to try to cater to it but now I just cook, if he can't eat, hand him beer.

Same.

When I was a kid I would bitch about it when I saw my grandpa cutting up onions for a dish. He basically told me to deal with it as that’s how it’s done. He was right and I always ate whatever. As an adult you realize onions are cooked down in almost everything with any kind of sauce.

I don't love them raw either. I can eat them chopped on a street taco or something like that but a big ole slice of raw onion on a burger is not my thing.

Grilled onions or them cooked into food is perfectly fine.

Yep.

But I can empathize with people that don't even like them cooked because I can't stand celery, raw or cooked. It's all I taste when something has celery in it.

I have to cook down onions really really well. Otherwise I just can’t do it.

The entire history of cooking disagrees with you. If leeks were superior, then cook books would be written with leeks in lieu of onions and celery.

So you eat exactly ZERO savory Cajun food? Cause celery is an indispensible part of every gumbo, jambalaya, etc.

Well, I'm in Alabama where traditional Cajun food isn't that ubiquitous, so I don't eat it very often. But I'll eat things with celery in it, but when I cook something that calls for celery, I either scale it way back or omit it.

My kids have don't like chopped up vegetables in their food. If I'm in a good mood, the vegetables get chopped into small pieces that are not noticeable, so they eat them.

If I'm in a hurry, l just cook. They attempt to pick them out, but they still end up eating the vegetables.

They'll learn, eventually.

Mushrooms can be a good substitute for onions.

This

and it's that big of a deal, maybe use less and pulverize them in a food processor. They'll melt away.

I am not a huge raw onion fan, but i don't really know how anyone can taste them in a gumbo or red beans or any things thats cooked or stewed down or whatever.

I find most instanced were you really can taste them you can just do without.

I find Garlic usually imparts a Garlic taste, no matter what,I but i don't taste the onions in a lot of things after a while,I and don't really even see them in gumbo.

Flavor wise, I feel like you could sneak in onion powder in some dishes, maybe add a little water to make up for the lost moisture.
