Chili powder from scratch

I made some pozole rojo last weekend which called for me to blend up some guajillo and ancho peppers to make the spice blend. The soup turned out amazing.

It got me thinking about how many other dishes call for ground up, dried out peppers. It’s basically limitless.

Does anybody have a chili powder recipe from ground up peppers that are dried out that they love?

I just made a big batch the other night. Put what you don't use in the freezer and it's good all winter. The numbers are the number of peppers. I usually use the numbers on the right for a big batch. Double the tbl quantities for a big batch.

lazy's chili powder

4 ancho
5 cascabel
2 arbols
2 chipotle
2 Tbs garlic powder
3 Tbs oregano
1 New Mexico
2 Tbs cumin
2 Tbs smoked paprika

Cheapo coffee grinder. I tried a masticating grinder but that didn't work well.

You might want to consider using a face mask, a good tight fitting one, before grinding that collection.

I have made my own (mortar and pestle) and finely grinding one of seven kinds sets my sneeze into overdrive. I don't have a problem with a light sear on a comal followed by cooking in a broth and puree the broth. But air borne is a whole other problem

You pussy! Ha, j/k. I try to grind outside and did wear a mask the other night since I wear my mask 24/7 anyway.
