His story just doesn't add up. It would make sense if he was shutting down the cue shop in order to do something in an already established kitchen or unrelated to food. But if you're worried about a family health issue, wouldn't you concentrate on paying the bills and/or insurance? Seems like the "family health issue" was used so people wouldn't pry further.

Complete outsider looking in, but this wouldn't surprise me. He had top shelf ingredients and products, but sold at a really low price for the amount of work he put in.
Some people just can't balance a checkbook much less run a business and many of those people are incredible cooks.
I can cook some good stuff as can a lot of people on this board but I can guarantee I can't cook any of it to make a profit. At least not in a restaurant setting. I have three friends who are and have been very good line cooks. All opened their own restaurant and all failed.

Why not just hire some people at $8 an hour to run the register and serve the food, all he has to do is cook.
Why not just source your meat from Sysco instead Chappapeela Farms?
Because he wanted the best

How much could the rent have been in that ghetto hole?

I'm not even trying to be mean. I sort of though it neat he got that building in actual commerce. Is the owner really going to be able to rent it to anyone else?
Posted on 11/2/15 at 10:07 pm to Y.A. Tittle
cause he was sorcing from Chappapeela Farms

This must be very common. It is the theme in so many places on shows like Bar Rescue and Restaurant Impossible.
Revenue is good, so they think they are doing well.
I had a partner who once said "well, we are losing money on every ______, but we will make up for it in volume."

Is he selling his equipment? I might be interested

It's already rented and will undergo renovation

I had a partner like that when I first went into business 30 years ago. Yeah checkbook duties were eliminated from his job description after the first months statement arrived.
I think he's developing a Common Core math curriculum these days.

If the 'family' health issue was serious enough to shut down the whole business, I would assume they have an individual health policy, but I don't know how they would pay for a policy without any income coming in. If his wife was ill, I could understand him shutting it down completely. If his kids were ill, he could have asked his wife to handle it so he could continue working and bringing in revenue. Hire an $8/hour employee or two to help him out. Maybe he just has extreme reactions to personal issues similar to his bizarre reactions on social media when he feels scorned.

"Bechtold said he will soon host more pop-ups. He also hinted about plans for a new project. Stay tuned."
Yes!

In December 2014, my daughter had to get her tonsils out. I was paying $500+ per month for Blue Cross health insurance, for me, wife, and both our children. The total bill at the end of the procedure was over $8,000.
This crushed my business, Three Bones Catering, which I had ran for over five years. I do not have any problem balancing a checkbook. I just didn't have the $8k. That's alot of food BTW. Lines of people? Do the math. Not possible when you make everything with your own hands, definitely not with BBQ.
I have nothing but respect for Chef Rob and what he does, no matter how weird he might be.
Eat with him or don't, but respect this cat. He will put good food on your plate.

It's great that you have such a great health plan. Our system is awesome!

If you were paying that much monthly, and between an outrageous deductible and/or Blue Cross not covering something as common as having your daughter's tonsils out you still had to come up with 8k, then fawk Blue Cross. I'm sorry to hear that you and your family went through that.
As for Chef Rob ... you said
"Eat with him or don't, but respect this cat" ... yet several people on this board and several other venues who are held in high regard have said that he has been highly DISRESPECTFUL to people via social media. I don't know how he, you, or anyone else can say that someone should be "respected" when they give zero shits about how they address other people.
I wouldn't give a damn if his food tasted like Holy Communion, you have to earn respect. Reciprocity. That's why many people on here have basically said the same thing ... that his food is awesome, but he's a douche. They respect the food, but not him.

Im in the medical business, specifically otolaryngology, and believe you were steered in a bad direction. Wish I would have known you at the time to give you better insight.
As for Rob - unclebuck is correct, the way that man spoke to people, the things he posted online, his attitude, his vicious wishes towards others.... Will not allow me to respect him. He had ill will towards others. Not acceptable. Im sure his food is great, but alot will never know due to his actions.
Its a shame he didnt have better PR skills, or someone to guide him in a better direction. I pray that his heart turns loving and the negativity dissolves.

You people who say this must not read his tweets or Instagram. The dude has a solid following and is loved.

I will admit, I have not read them all. I have read enough... And many were posted on this site. No reason to act that way towards other people.
Maybe the negativity was a small fraction of what he said/did... But its impact is obvious by the number of people that reacted.
Is what it is. Some will support and some wont. Cant please everybody

That is a shitty plan. I have a very very tiny appliance repair company, I do not have $8,000 in cash reserves, I know I should being this is TD and everyone is rich. I do have enough credit to cover it. I figure I ever need something like that and I will just be in debt to Barclays.
My insurance though can't exceed $3600 out of pocket for me for the year. Though I don't have kids of my own and my steps are on their dad's plan.
Though I would take on debt and let my credit rating suffer before I closed my business. $8000 isn't much in the scheme of things when we are talking a business. Even if you just didn't pay the hospital bill and let it go to collections... Keeping your income flowing is more important than a credit score.
