Chain Pizza Question: How Is Grimaldi’s?

I have found that they vary in quality from location to location and from visit to visit. They have great ovens, and every afternoon they close for an hour or two to stoke the ovens. That can be frustrating if you visit at 3-4, but there is not a better heat source for dough than coal. Their sauce is average. The last time I went to the one East of Destin, which was my favorite Grimaldi’s, the sauce was below average and the end result was a subpar pizza.

The Grimaldi’s next to the Brooklyn Bridge is the flagship and the most reliable. However, I prefer Julianna’s next door. The original owner of Grimaldi’s, who I think was the grandson of the owner of Patsy’s in Spanish Harlem, which was the first place in the world to purchase pizza by the slice and still has a great slice, and at only $2.50 the last time I visited in September, sold Grimaldi’s over a decade ago. Rumor has it he gave the current owners a different recipe from the one he used. He opened Julianna’s next door and they say the original recipe is there. I do prefer Julianna’s to Grimaldi’s, but neither is the best option in Brooklyn Heights.

The short of it is Grimaldi’s is the best national pizza chain. When there are pizza makers in your location that care, they can make a pizza as good as Patsy’s and the original Grimaldi’s, which at times push the border into world class. At other times, when the pizza makers do not care, the pizza is expensive and disappointing.

LOL, an hour away? F no. It's not bad fresh, but the leftovers are inedible. Greatly prefer Mod over Grimaldi's, without even considering the 3x cost of Grimaldi's. I had a Grimaldi's 50 yards from my apartment door for a year, ate there twice, regretted it both times.

I think this is a very fair assessment. I have had some really good pizzas at Grimaldi in Iowa and Tampa and some terrible ones - like at the old mall of LA location
