LA23, they actually did it the Franklin way and have been successful. Started out small and expanding.

Yeah, but it started out like Franklin with a little shack and isn't a venue like CCBBQ. NOLA selling out wasn't that big a deal to me. I do know it pissed off some people here though. Maybe it wasn't the best idea with the location rent, I don't know that part though.

I think people in Louisiana just have unrealistic ideas about BBQ and BBQ restaurants

Selling out of food is the norm in Texas BBQ joints

Yes but the comparison to me isnt Tx bbq places to NOLA bbq places. I think the better analogy is something like this. Most fine dining places dont open for lunch save maybe one or 2 but Galatoires opens everday for lunch (save Monday when closed). Galatoires does because they know everyday there will be 100 people waiting to eat there, its an anomaly in restaurant world. Just like bbq restaurants are sort of an outlier in the traditional restaurant business model.

Franklin and other texas spots (and many elsewhere arund country) are more like Galatoires in that he knows everyday 300 people or whatever will be in that line waiting 3 or 4 hours for his brisket. Thats a different ballgame than in a city with a plethora of food options and reataurants of all ilk. In many of the towns where bbq is big, a bbq restaurant might be one of 3 or 4 dining options for a 25 mile radius that isnt fast food.* That changes things.

*obviously doesnt apply in places like Austin, KC, or Memphis.

People make destination trips to Portland and Colorado for beer. Likewise, people will make a destination trip for Austin area BBQ.

Just different levels.

I'd definitely pick Smittys over City Market. Love that place, and has some of the best sausage that you'll find anywhere. Bonus points for the atmosphere.

If you go earlier next time, ask for the manager Cliff. He can givie you a very detailed tour of Smittys. Easily one of my top bbq experiences.
