And I respectfully disagree. I hope more people will follow his lead and post more of their recipes. Just because they aren't haute doesn't mean that other people couldn't learn or benefit from them.

Yeah bro, quantity over quality .. That's what makes a good message board poster. And where have I ever claimed to be an expert on anything? I've eaten a lot of fried fish. Catfish, perch, bream, bass, redfish, trout, buffalo ( ) etc. To my knowledge none of it was ever coated with mustard.

Mustard battered catfish is great.

I'm not sure about the fried fish stew but I would try it.

Well I'd try it. And for all the haters I'm assuming no one has ever ordered/cooked/ eaten fried catfish smothered with étouffée or redfish/catfish courtbouillion or even fried chicken gumbo most of which can be found in any many south Louisiana restaurants?

Whether you like the guy or not isn't relevant but to just pile on is pretty much pack dog mentality. I'd be willing to bet if I'm cooking this dish and put it in front of you at the camp everyone would try it. Like it or not is a different thing.

I'm not a coon arse. I'm just a south Louisiana man but many of my Cajun friends would be embarrassed to here their self proclaimed brethren acting like they are gods gift to food because pow pow was from Mamou.

As I said in another thread, it's not food snobs, it's food assholes.
