frick the haters MD, I'd eat the shite outta that. Sometimes you just wanna do something different with fried catfish (pretty boring to begin with). I have no issues with this

A fish stew or even a courtbullion below I10 is something completely different, but I would eat that, maybe.

Generally, I am against using any soft fish for one, but a couple years ago, I caught a huge flathead and used the muscle along the top of the ribcage. Cut in steaks. It was pearly. Holy cow was that good. Different than goo or red, but good. Did not break up.

I don't think he ruined it by any means. I don't like soggy fried fish regardless if its catfish. Therefore, I wouldn't eat it. I'd try it I suppose (early I said I wouldn't) but I highly doubt I'd like that.

It is probably foolish to add to this post.
If you google "Catfish Stew recipe", you will find a multitude of recipes for this dish. Depending on how open minded you are, that should indicate that I did not make this recipe up. If you google image "catfish stew" you will find a number of photos where other people have made a similar dish.
My recipe is very similar to one we have from a Time Life "Foods of The World" cookbook - 1971 edition, so the recipe has been around a long time. The Time Life recipe uses unbreaded, uncooked catfish - cooked in the simmering stew -like adding raw shrimp to cook in gumbo and I never liked the catfish stew cooked that way. Also my seasonings vary from that recipe as does the amount of corn I used and the thickness of the broth.
The Time Life Book says this is an old southern Soul Food Recipe and I still believe that to be true.
We have made this dish several times over the years and will make it again. Hardly ever cook it, because we hardly ever have catfish left over. When we do, the first thing I think is "Make catfish stew" because the dish is really good - when it is very fresh. It does not heat up well at all because the fish is best when crispy, so whatever is left over is usually thrown away.
There is a similar Thai dish called crispy fish that uses fried fish filets with a very liquid broth and Thai seasoned vegetables. I can't believe no one has eaten and enjoyed this Thai dish.
I understand there are TD FDB readers who think I troll these recipes and that is not true. To me, this is no different than someone else posting a mussel stew recipe, which I do not like because I don't like the flavor of mussels. However, I would read the recipe and look at the photos if posted and would certainly look to see what I could learn from the post.
Regarding my post and whether it had any value, my opinion is that perhaps someone who read it had never cooked the corn cobs in a broth to get the flavor out of them after cutting off the fresh corn. That bit of information alone would be helpful. Also the fact that adding butter adds both thickness and sheen to a broth.
One other thing. in no way do I expect to ever post anything that is universally liked (or hated)by the readers here. we are much too diverse a group for that to ever happen. It is why I try as hard as possible to stay out of debates over taste preference or cooking methods or appeal of one gumbo recipe over another. It is why I almost never respond to your comments. I respect them and have no illusions that my words will change your food likes and dislikes. We are a diverse group.
When I post, I fully expect some and often many of you to be unhappy with the eye appeal and your perceived taste for the dish. That is fine and I certainly am not offended when you say it looks like shite to you. As I said, we are a diverse group.
I would never eat chitterlings because I would be afraid they would taste like shite to me and I would not enjoy that.
