Cajun Cabbage

A creation I came up with by taking a friend's recipe and jacking it up a couple of notches. This is my first try. It will be even better the next time I do it. I call this Cajun cabbage.

1.25 lbs. pork sausage (I used fresh pork sausage from Best Stop in Scott and baked it for a while at 350 degrees because it was too soft to cut raw)
One head of shredded cabbage
One sliced red bell pepper
One sliced yellow bell pepper
One chopped white onion (I put the peppers and onions in raw but next time will sauté them first)
Cajun seasoning to taste (I used Cajun One Step Fire)
Mix everything together and coat with olive oill
Put in a casserole dish and bake at 350 degrees until cabbage is tender (about 30 minutes)

Looks good. I love cooking cabbage. It’s cheap as hell and tasty. I usually sautee it with some vinegar and soy sauce. A New York Times food writer had a great recipe- oil a roasting pan, put a layer of thickly sliced cabbage on top, season it, then put a chicken on top of the cabbage. When you roast the chicken, the cabbage gets caramelized and it soaks up all of that chicken fat.

Planted my fall garden today. Cauliflower, broccoli and cabbage. If you like any of these 3, then do yourself a favor and grow some. There is nothing like the taste of fresh broccoli, cauliflower or cabbage.

Agree 100%. I grow them every year in my garden. I especially love broccoli since it can be harvested over a long period of time. You cut the main head and it will keep on producing side shoots for a few more months.
Cabbage and cauliflower are a "one and done" plant, so I usually plant more of them due to that fact.
I also grow Brussel Sprouts and they are very tasty when picked fresh from the garden.

I'd eat the hell out of that. Looks really good. Cabbage is one of my favorites. I like to sauté it with bacon and onions then eat it while it's still a lil crunchy.

I learned this from a guy at work for cabbage. Cook a jambalaya, but reduce the liquid and substitute the rice with cabbage. It's my favorite way to cook it.

We occasionally make what is essentially cabbage roll casserole, which is all the same ingredients as cabbage rolls, but we just skip the labor of rolling them up.

I do something very similar, but I do it on the stove in my Magnalite dutch oven with Bailey's andouille. I brown everything down pretty well and add a little bit of sugar to sweeten it up.
