Brining and injecting a boston butt

I have never done either and I am looking for tips. Do you wet or dry brine? What do you use. Is there much benefit do injecting? If so what do you use and how much per pound? TIA.

Pork is already very fatty, I dont really see a reason to inject or brine.

Maybe someone who has done this before can shed some light on it.

Waste of time imo. A pork loin on the other hand greatly benefits from a brining.

My take on this exactly. The only thing I do to Boston Butts is season the outside of them if smoking them, and do so quite liberally.

If roasting one, I'll cut several deep slits in the meat, season each hole with salt and pepper then place a clove of garlic, some green onion top and parsley in each hole before searing it in a Dutch oven to brown the outside prior to placing in the oven.

I've brined before and thought it helped add some flavor. Included onion, garlic cloves, worcestershire, salt, and a bunch of other shite.

I was kind of thinking the same thing but I have heard of people doing it. I was thinking the injecting might at least add another layer of flavor.

I might try injecting this weekend. I think the brine is a waste of time though. The only reason I'd inject would be to get some extra added flavor of some apple cider vinegar or something.

If ya gonna inject look in the seasoning for onion and garlic juice think its reese brand but not sure it sure is a good adition to your injection

Yep, I've always noticed a difference. Tried many different injections, etc. Used one with nitrates, similar for the brisket products, and the results were great.

I do both the night before and can tell a big difference in flavor. The brine is simple: 3/4 gallon water, 1/4 gallon vinegar, 1 cup salt, and 1 cup sugar. Add a tablespoon or so of whatever rub you are using.

Brine overnight. Before adding to the smoker, inject the butt with the brine. Don't do too much and over salt it.

It’s not necessary, and it may be a waste of time, but I use the Chris Lilly injection from his 6 or 8 or whatever world champ recipe.

This is plenty for a whole shoulder or two butts (what we usually see at stores)

Pork injection
3/4 cup apple juice
1/2 cup water
1/2 cup sugar
1/4 cup salt
2 tablespoons Worcestershire

I inject only when i'm doing a cuban style pork butt. When i'm doing traditional, i mix in a vinegar solution as i'm pulling.

I never brine a pork butt.

I always inject with Tony’s lemon butter. Literally no need for BBQ sauce when it’s done.

No brine or injection needed. Already has enough fat. Slow smoke and enjoy. Finish with a vinegar sauce.
