Mustard is mainly for rub, can aid in bark formation according to some.

It might be in my head but I inject my butts and it seemed like it came out tasting a little better. A little pineapple dripping on the butt while it smokes gives it that extra flavor

I did a 7lb'er a week ago.

225 high smoke

around 7 hours.

I pulled around 165 IT and sliced it with my electric carving knife.

Stuffed with garlic and spices.

Amazing!!!!!!

I use the Chris Lilly recipe that he’s won about 8 world championships with. Easy to find online. Simple injection and rub, low and slow overnight. No wrap. Rest and pull. Always a winner.

You could probably skip the injection and not miss it, but I stick with it because it turned out great the first time I ever did it.

Buncha experts in here smoking all night at 225° make me laugh. Stackem high and watch the needle fly 300-350° and it'll be done in less than 6 hours I guarantee. The key is to put a pan underneath and pour the drippings back over the meat once you've pulled it. I taught Cobaw bbq this method and he sells out every weekend. This fool proof method is undefeated

I've heard rumblings of this method before and cobaw BBq has gotten heat for some of his inventive techniques. I am intruiged, but must be honest. I'm skeptical.

I've done this at work when we are only there for a 12 hour shift but want pulled pork. Usually keep it around 325 and will spritz sometimes to keep the outside from drying.oit. but have never had a complaint when going hot and fast.

Can't speak for a Traeger, but I've done two butts on my Masterbuilt electric and they have taken about 2 hours per pound on 225.

Coated with yellow mustard
Added rub*
Wrapped in fridge overnight
Preheated smoker to 225
Butt in smoker (never wrapped)
Removed at 201-203 internal
Rest and pulled

Both times they turned out really well

*Rub of choice: 2 tablespoons paprika, 2 tablespoons packed brown sugar, 1 tablespoon chili powder, 2 teaspoons garlic powder, 2 teaspoons salt, 1 teaspoon onion powder, 1 teaspoon chipotle powder, 1 teaspoon pepper, 1/2 teaspoon dried thyme, 1/4 teaspoon cayenne pepper

here is something different for you baws we can talk butts a long time and that is a testament to haw wonderful and easy cooking they are. Anyways next time ya season one up cut a diamond checker board in the fat cap.

When its done ya have these amazing lil pull off cubes When I take one up I can never get a pic of it with out a few of these missing.

once it is cooled I just dig in with my hands.

Once that is done and its all threaded up

something else different sometimes we pour in a gallon of our chunky home made sauce since ya aint got any jack millers works almost as good

That’s a large chunk of meat. I think brine is almost mandatory. The rubs are great for bark and some of the flavoring but will never penetrate that deep. The low & slow cooks help break down the connective tissues but don’t really affect the flavor. A brine will add flavor throughout & even an injector would not be a bad idea for the size shoulder you have. Good luck.
I’m jealous of the Traegers because they are perfect for butts. I went with the Kamado because it’s a little more functional for different type cooks but the Traeger is a Cadillac. Enjoy.

90 mins per pound at 225. I just put some foil over the butt about halfway through Let it get to 205 internal

I don’t inject but rub overnight most of the time.

Most important part is just taking your time on the smoker. A butt for 12+ hours on low heat is gonna turn out pretty great regardless of prep

I hate, hate, hate to have to wrap one, but if I do, I pull it out of the foil (I need to grab some pink butcher paper) around 200 and back in the smoker for a bit to hopefully get to 205 and dry the surface back out a little. Sometimes I get caught short on time, and I have to go this route. I like to cook 250-275 for a Butt and usually don't have an issue with stalls. If I wind up cooking lower, like say 220-230 range, I'll run into the stall issue. I keep saying I'm going to do something other than eyeball my vents on the BGE, but haven't taken the plunge to get a pit monitoring and/or fan system. I just use a thermoworks probe for the meat temp.

Don't knock it until you try it. Absolutely amazing. Juicy and flavorful.

Smoking it to 200+ and slicing is too dry.

This method is delicious!
