Boiling Lobster

Anybody have any experience boiling lobster? I see a bunch of recipes from the northeast online, but they seem bland. What about boiling them Louisiana style?

I don't want to overpower the lobster, but I do want some kick, not just poached seafood with butter.

it works really well,you just wait until after the kiddie batch we usually do first with less seasonings.

A lot of people will cry foul, but I had some done like that when visiting my uncle in Boston, and they were delicious.

did it for mother's day, la style and they were damn good. I did add more lemon that normal though

I have done this. Very good, but steaming is better, IMO. You can pick-up one of these at Wal-Mart and it works great.

Wal Mart will steam them for you. I don't like the Louisiana spices with lobster. I like the taste of lobster which gets drowned by rtoo many spices. I think "Louisiana style" is why you can't find a decent crap cake in Louisiana.

Question for those that have done this, how long do you leave them in the boiling water? Because of their size I would think you have to boil them longer, but how much? Thanks.

Is 13" large enough to facilitate a lobster? The clear casing would allow for viewing of the lobster's demise...mwah ha ha haaaa.

Hate to say it, but I think New England style is better. Lobsters are far sweeter than crawfish or crabs. I just don't think your typical savory boil works well.

I think lobsters have lots of flavor and don't need anything too overpowering. Had them steamed and boiled in beer...very tasty.

I loves me some lobster. Get a pound of steamer clams per person as an appetizer. If you want to spice things up then dip the steamers in some Old Bay seasoning before eating. DO NOT try to cook a lobster "Cajan style." That makes about as much sense as cooking crawfish "Boston style."

lobster exists outside of boston. crawfish exists outside of louisiana. both can be cooked in different ways and they are.

lobster can be good with lots of different flavors. crawfish can be good cooked more simply.

in fact crawfish probably has more fat/guts per amount of meat than lobster does, so it arguably brings more flavor to the table without outside seasonings.

I have eaten crawfish boiled in nothing more than plain water and lobster that was fried. Trust me and cook foods in the conventional manner.

As one previous poster wrote, crab cakes suck in Louisiana because Louisiana chefs do not know what the hell they are doing. Cook crab cakes like they do in Maryland.

Don't try to be creative because sometimes the original cannot be improved. Understand that or stay out of the kitchen.
