Boiling crabs?

Been a while.
Boil for 20 mins? Soak time?

Boil for at most 10 and soak for about 30

Season your water. Put crabs in. When air bubbles start to slow down, light burner.

When water starts to boil, cut off flame.

Crabs are ready to pull.

Boil about 5 minutes and soak until they’re ready.

Boil them till they float, soak them till they sink.

Typically 5 boil, 20 soak.

Boiled the 6 dozen we caught today for dinner. Boiled for 10, soaked for 20. The crabs, potatoes, onions, corn and wieners were perfect

Does anyone poke holes in the heads of the shells to get more of the seasoned water into the bodies of the crabs? I remember seeing it done years back. Same with the claws. I remember using mallets to put slight cracks in the arm and claw.

You can drink the juice out of the shell as is, poking holes would only serve to let it leak out.

There’s more juice than you’d care to drink already.

We boiled 2 dozen yesterday. They were damn good.

I never knew that drinking the juice out of the shell was a thing...makes sense though.

The little tab, that reflects whether it’s a male or female easily pulls off so you can sip from the back. Good stuff. Makes the eggs taste a little better if you soak them in it too.


I was asked what gender crabs I wanted when we purchased them. I asked for 50/50 because the females were bigger.

Couple cups of dry seasoning plus a couple Tbsp of liquid. Lemon juice, peppercorns, bay leaves, garlic. Boil 10, soak 25-30.

I’m not from Louisiana and moved to Florida in HS, but my buddy that taught me to crab always takes the top she’ll off and cleans it before boiling. Outside of sucking the juice from the head, is there any other reason not to do this?

Wouldn't that kill the crab? Seems like it's better to boil them live.

Ha yeah, but then you take a hose and clean everything up. All you are left with is the shell and meat.

What a waste...the fat (which is really an organ called the hepatopancreas) and the eggs (if female) are some of the tastiest parts of a blue crab. If boiling to enjoy as pick-your-own crabs, why wash out the tastiest bits?

Ppl sometimes pull the top shell off & clean out the inside of so-called "skinny" crabs, whose sole purpose is be boiled to add crab flavor in a stock or gumbo. You can buy "gumbo crabs" already dressed this way, often with the legs cut down to the last joint (so the legs don't fall off in the gumbo, LOL).

I do that for grilled crabs, but that just sounds like a PITA for boiling. Especially when you're doing several dozens.

Other than you will likely overcook them, not to mention you loose any of that delicious fat? No, can't think of any.

During the soak do you just turn off the burner or also add ice?
