That’s how I do it. I love drop eggs in a gumbo. My wife like potato salad with lots of boiled eggs.
I like sweet potato with gumbo too.

Exactly. That's the only reason the eggs were ever in the gumbo. Simply to add protein. It's not because it was the best tasting thing ever.
I've had it that way and it just really doesn't add anything to the gumbo.
I'll take my tater salad on the side, thank you. I'm a rice purist as well.

I am a native New Orleanian who never had potato salad in his gumbo until I had to spend a fair amount of time in Lafayette for work. I'm never going back to rice.

I replaced the rice w/ potato salad several years back and haven't looked back. I am ready for some cold weather because it makes it that much better!

I will eat gumbo with either rice or with potato salad
Rice don’t bring a lot of flavor but potato salad does and it’s good

so we grew up that day 1 no eggs, day 2 after alot of the meat had been eaten from the gumbo....you reheated and brought to a boil and dropped eggs in for the protein.
im from SWLA and family is originally praire cajuns(can trace my ancestory back to Nova Scotia and back to france) and as far as potato salad goes...i personally like a scoop in my gumbo. my dad and sister do not and like it on the side. my grandma did, grandpa didnt and liked it on the side
i type all that because i see some dumbass post on here that if you put potato salad in your gumbo, you arent a real cajun....which is absolute horse shite. Its whatever you like. for some, it taste good, for others its too much. liking either way doesnt make you a cajun or make you not a cajun.

Sweet potato is my favorite in a gumbo but will use potato salad or eggs as well.

My grandfather is from Plaucheville in Avoyelles Parish and we serve it over rice...no egg...no tater salad.

I like potato salad in my gumbo from time to time but never did whole eggs in the gumbo. Though shrimp stew always had whole eggs. It’s a regional thing much like crawfish dip
