Based on threads from years past, I’m putting the bird on the bge and cooking at 375 for a shorter time, worked well last year.
Happy Thanksgiving

Initially 500 degrees for about 20 min. or until honey brown then you lower to 200 and it suggests 40 min. per pound but mine was done about an hour ago.

My 16 lb-er is just about to come off the WSM. Smoked with pecan and apple. Ran the smoker at 300-315 so only took four hours.

A little help on this topic. I was going to smoke our smaller turkey this year for the first time but became concerned about having drippings for the gravey. What's the word on this? Is it too smokey?

I used the neck, backbone, tip and giblets for my gravy. Browned them and made stock out of it.

Mine just came off and under a tent. Love this style of cooking I tried for the first time this year for Turkey. It looks very good.
