re: Best soup for a rainy, cold day?

I had taken out some stew/soup meat earlier today and decided to make a nice pot of beef stew for tonight's dinner. It is on the stove now and making the house "stink pretty".
It will have potatoes, carrots and mushrooms along with the beef in the rich brown gravy. My wife also likes to put some peas in it so I'll probably do that when it is nearly done since they really don't need to cook long.
Can't wait for dinner.

Google Emeril's recipe. It's pretty good. Something I do when I make a pureed soup with sausage or andouille is to hold some aside or some extra, chop finely, saute until crispy and use it as a garnish.

I do too. When I make mine, it takes a couple hours to finish since I caramelize several large onions slowly in a bit of butter and then slowly add my homemade beef stock to it and let the first few ladles of stock almost evaporate to concentrate the flavors before adding enough to make it a nice fairly thick soup.
Then it's just adding some Swiss cheese and put it under the broiler to brown the top and add some homemade croutons to finish it off.

Right now....must try...Drunken Fish on Highland has the best soup special. Hot and spicy lemongrass pho. It's amazing! I told them they needed to keep it on the menu. Hope they do!

It was in the single digits here the other day and I made a Tuscan Kale and White Bean Soup with Spicy Chicken Sausage.
Nothing wrong with a lobster bisque when it’s cold out too.
