What freaks me out is when I see someone who is local buying Richard's or Savoie's. With all the high quality sausage available in the area and they buy that shite.

There are too many to name. Here are some others beginning in Laf.:
Don’s, Kirk’s U need a butcher, Best Stop, Earl’s, Bosco’s- Opelousas, Pap’s-Mallet/Swords, Eunice Poultry, Eunice Superette, Mel’s Quick Stop, Mowata Store, Rhea’s- Basile, T-boys-Eunice n Mamou, Charlie’s-Mamou, Coutee’s - Eunice.
Kinda like boudin, the best one may be the closest to your house.

people are generally lazy and want convenience. They'd rather shop at the Walmart 5 minutes from their house, instead of driving 20 minutes across town to buy high quality food products. The only sausage I buy from Rouses is Rabideauxs since I live 1 hour away from Iowa, LA. When driving back from Lake Chuck, I'll stop at Rabideauxs, eat their fried catfish, and buy 4-5 lbs of the smoked sausage. I'll also buy from the local meat markets in Ville Platte, Church Point, Basile, Elton, and Eunice when traveling 190

Unfortunately, Mr. Danny has retired and the shop is shut down. Have to travel to Eunice to get LeJuenes Sausage!

Your last paragraph intigues me. I live in Germany, where there is plenty of smoked sausage, but nothing like boudin. How do you go about doing tastings in Asia or Egypt? Just curious. I've turned my friends on to gumbo, pulled pork, and boudin, but don't know anything about creating a business from it.

NuNus has a nice variety of sausage both smoked and fresh.
