Sitting across from a local BBQ restaurant and they're clearly using hickory, nothing else smells so damn good.

I like Pecan it is in the hickory family just a bit milder than hickory

Pecan and red oak for me but I like the smell of most all of em. Except the piney resin woods.

Cherry for me. Although I haven't smelt a smoking wood I didn't love.

Hickory, pecan, oak....most everything but mesquite. Not a fan.

Back in the olden days Mesquite was all Cookie had to cook on on the old cattle trail. After years of this the dumb Texans started thinking it was because Mesquite was good wood to cook on. Not because it was the only fuel source in 500 square miles besides cow dung and tumble weeds. Thank God for Mesquite though. Without it there would be a whole subset of people that prefer cooking meat over cow shite.

I had the tree pic confused a while back, but there's a tree called a China Ball (may not be the real name) that I've had smoked beef ribs smoked with that came out like a little bit of heaven. It's all over Mississippi.

Good stuff.

Apple wood smoke on sausage and pork for me.

This place in Michigan uses apple wood from orchards and their smoked products are amazing. Tons of LSU and SEC pennants in the store too from transplants to Yankeeville.

To me pecan is stronger than hickory. That's why I use Hickory.
