Mine goes to Paul Prudhomme's recipe from La Kitchen.

I have a bottle of Arnaud's Remoulade Sauce in the fridge(Maxwell's carries it), it's a classic red in hue.
My fav, was BR's shortlived run of NO's Mandina, which had a great pinkish White Remoulade Sauce..really fab fresh sauce.
Emeril, Folse, etc..overall I prefer White Sauce.
Had a nice shrimp remoulade salad at Brigtsen's Charlie's Seafood last week.

Clancy's, Galatoire's or Arnaud's is the correct answer. My vote is for Clancy's.

Hawks Nest with a side of homemade potato chips

I have not had a remoulade in BR that was remotely acceptable, including Hawk's Nest. The absolute worst was Brewbacher's, which I believe to be liquid crab boil and mayonnaise, it is disgusting.
Favorite is my own, a red style, similar to Arnaud's. Remoulade is not that hard to make, but is must be made from high quality ingredients. My brother-in-law makes an excellent version, his signature ingredient is mustard oil, very hard to find.

Newk's Express Cafe has a good shrimp remoulade salad. I think they only had it for a limited time though.
