Grocery stores will cut steaks to your desired thickness if you ask nicely.

Costco, fresh market, Heleauxs, Joey's, Rouses.

All of those will have prime and will cut to desired tickness

Call some of the AG stores and ask if they have Chairman's Reserve ribeyes. It's dang close to prime and much cheaper.

Check out Rouses. They have the steaks all set to go on the shelves, but also feature prime and dry aged at the counter. I just came from there and the prime ribeyes were looking really nice and marbled. I'm sure they could cut to the size you want. I also know that Albertson's will cut steaks to size. (Both Lafayette...I see that the OP was recently amended.

I need to pay more attention when in Rouses, I don''t think I have ever seen prime or dry aged. On a mission tomorrow, well two missions.

Johnston location. They've prime bone in and no bone ribeyes and also prime filets.

When I go to stores I generally know what I'm getting or shop for the sale items from the circular. With Rouses, I'm getting whatever looks good. Sometimes the head on shrimp are huge, the tuna is looking good, they have turkey necks or breasts, red snapper, etc.

I know youngsville Rouses has prime and dry aged for sure.

Degas and Jack .. I'm in New Orleans area so maybe that's the differnce. My go to is Costco for Prime including short ribs. Sometimes another butcher shop.

I think we both have a Komado style grill, I just get it to 250 and pull when i get to IT of 190 and let them sit for 20 minutes Best style of grilling ever. I use a Bluetooth Igrill and don't even open untl done. Always come out dense and ric'h. Love beef short ribs.

I've never touched beef ribs.. I hear it's like brisket on a stick? Any troof to this?

It is freakin beef candy. Yeah and in the end it's on a stick.
