Skirt w Skin is not cooked to order temp-wise.... Its served cooked... Its how they can get it super tender/flavorful and the "cracklin" skin crisp. I eat duck and burgers medium rare and would never have believed how good it would be based on the description.

There is a fella in there that will give u all u need to know about Argentinian wine.. He will make a good suggestion if u tell him what u like.

Sweetbreads are good. Get the cheese. Trust me. They serve it n oil n a cast ron skillet. Redonkulous.

That's what makes it funny. they had nothing at all to say about louisiana's fries.



Yahoo also had a "best chinese restaurant in each state" list the other day...equally bad. Their selection for Louisiana was Nine Roses in gretna, which is primarily Vietnamese (albeit excellent), and their answer for the entire state of California was some food truck.

The duck fat fries at Cotton, dressed with a little parm cheese and served with a fine Béarnaise, may be the best in the state.

The fries at Frankie's Dog House are pretty darn good. Certainly better than the ones they picked.

Had them last week. Not anything I would write home about. But they were fries. They were decent fries. I don't get a chub for fries. Just me.

Seriously. Jack Beagles fries? I've had better fries at a half-dozen places just in the Research Triangle. And while I've never had Parrains' fries, I automatically question it.

Parrain's fries are pretty freaking good. I don't know what they do to them but they are really good. You eat so many, you barely have enough room to finish the rest of the plate.
