If the meat is loosely packed, you season the outside well enough, and you aren't afraid to properly sear over higher heat.. it will be incredibly flavorful. The "flavor" we like so much in burgers or steaks comes from the sear/crust and the fat. A lot of home cooks are afraid of high heat cooking, and that's why you see a lot of un-seared steaks and burgers that are cooked way too long on too low of heat.

When I make them, I can't wear long sleeves because the juice drips down my arms. Once you switch to this method of making your burgers, you will never go back.

Salt is the one that makes a difference. It changes the texture in a bad way. Everything else is ok.

Are you saying salt on the outside of a formed patty ruins it? Or are you saying seasoning the meat with salt before the patty is formed ruins it?

Had this for the first time last Sunday. Burger was good, but the fries were amazing. Quite pricey but a good lunch.
