Thawing out a backstrap for dinner tomorrow night.... What is everyone's best recipes?

Treat it like a steak

Sear on outside then throw it in the oven till medium rare

Cook it like a ribeye.

Put 2 kabob Spears through it because it tends to curl with high heat

Get pit up to 700 degrees. 4 minutes on each side. Rest for 10 minutes.

Make a bacon weave.
Chop some jalapenos and mix with cream cheese.
Stuff mixture in backstrap.
Wrap bacon weave around backstrap.
Smoke.

Cut into medallions, sear in hot cast iron skillet with some garlic butter

S&P. Hard sear on outside, rare center. Top with Chimichurri. My favorite way right now. Also, google venison diane and that recipe is awesome as well.

Make slices a little bigger than 1" S&P, garlic powder on each side. Screaming hot cast iron and 2 minutes per side. Once you've got your meat done, throw onions or shallots in and reduce heat so you can scrape up your brown bits to make a red wine, thyme, garlic, and oyster(or other earthy mushroom) reduction sauce to top it with. I did a quick search and thought this was pretty close mushroom love.

Or you could just fry it and serve with white gravy. Maybe just wrap in bacon with jalapeno and cream cheese like everybody else...

I have a venison Marsala recipe at p 141 of the Recipe Book that is simple and excellent. It's very economical with the venison, too.

Cut 1" thick, beat with meat tenderizer, soak in Buttermilk, fry it coated in flour

Cut into paper thin slices, batter in buttermilk, fry em up coated in pancake mix.

If I'm at home I usually fry it using an egg wash and seasoned flour then make a milk gravy with the oil and leftover flour.

At the camp, I cut into chunks, sprinkle with Tony's, wrap in bacon with toothpick, then grill over an oak fire until bacon is done. It's so good I can't describe it.
