BBQ - What is it?

When I lived in Alabama I loved to find the little hole-in-the-wall BBQ joints. When you'd go in, you'd ask for a BBQ sandwich and there was no question that what you'd be getting was pork BBQ. Out here in Texas though, if you find a joint like that, its going to be beef BBQ.

Side question...is this a regional thing, cultural thing, something else? I know Texas produces tons of beef due to all the cattle ranches and Alabama is more of a farming state.

Yes, it's regional. The BBQ sauce alone shows that.

But BBQ is typically pork everywhere other than Texas.

Uh duh. of course it is a regional thing. Texas BBQ is beef, southern BBQ is pork.

I mean you can literally bbq any meat though.

It's a slow cooking method over low heat.

That was my main reason for asking. I have only ever lived in Texas and Alabama. I've never went those small areas where you could find the best BBQ in any other state.

You can find some pulled pork BBQ sandwiches out here, but its mostly at franchise restaurants that have it on the menu "for a limited time only" and never really that good.

True. In KY they bbq mutton. I've had bbq goat and it was good.

BBQ is a method of cooking meat. It is not defined by the type of meat.

I agree, but would say add some kind of smoke wood for BBQ.
