Politiceaux sounds like you have your hands full. It's great your still active in Cameron parish as I have had many wonderful meals and hunting trips there. It definitely has a special place in my heart and some of the best Cajun food I've had. Keep up the good work!

same, well, my ancestors are from st Martin parish specifically Cypress island/Catahoula and Henderson/Cecelia/Arnaudville.

Have you ever tried it? It is actually very good. Cold potato salad taste great in hot gumbo.

I always thought of it more East/West.

I find the roux and gumbo to be "thicker" in the west and you are more likely to get Chicken and sausage gumbo than seafood. Nearer New Orleans, you get thinner roux, seafood, celery.

And with my wife being from Lafayette, there's always potato salad as a side with the gumbo around her large, extended family (branches in Scott, Ceclia, Arnaudville, St. Martinville). It's optional whether or not you dump it into the gumbo, but I find that most of them do.

Rice and gravy is hard to find out here in the east.

Also harder to find decent boudin east of the Atchafalaya.

I'm from Ascension and grew up on rice and gravy. Of course that and jambalaya were the first things I learned to cook.

we are from Sulphur-Lake Chuck and we use celery in everything, i never ate gumbo with potato-egg salad in it until this last spring when i took a french immersion class up here at Universite Sainte Anne with a bunch of coonasses from ULL Laffy-I made my mawmaw`s gumbo for 30 people and one of em brought egg potato salad, gotta say it was delicious and have been doing it ever since...

The reason us folks from Acadia parish put eggs in stews and gumbos dates back to early lent time back in the day. The old Acadia Cajuns didn't eat meat at all during lent. It was their source of protein when seafood wasn't available. Been eating eggs in my gumbo since we would all go to my great grandma's house and eat her gumbo.... Miss the ol lady! Called her Ma Mom!!
Being that my great grandmothers family was from Nova Scotia and settled in the shite hole that is Rayne.... Puts my family from Acadia parish and I guess I'm Praire???

I cried a few tears at the memorial at Grande Pre up here, found my families' two french names on the list of deportees...we are a resilient bunch of people... As far as the gumbo and egg/potato salad i find it 'smoothes my gumbo out...it's pretty spicy for folks up here and i am making a gumbo on average once a month...

Seems like the Cajuns who were mixing with Germans are the ones that did more of the boucherie/sausage making and smoked meats. Ville Plate, Roberts Cove, German Coast/River Parishes. Is that right? I just don't think of bayou Cajuns doing that much.

I'm an Irishman in Baton Rouge. I do all of the above so I guess being stuck in the middle isn't so bad after all.

Well I got some St. Landry Cajun on one side and some Pointe Coupee by way of Belle Rose/Paincourtville Cajun on the other..

I must be some kinda mix bleed Cajun

Most people who think it is awful have never tried it, and most of them have the same reaction when they finally do!

Prairie cajuns use more red pepper in there food than Bayou Cajuns.
