Barbecue Sauce recipes

Looking for something with a vinegar kick. Particularly something similar to Jay's BBQ.

Jay's BBQ sauce is Blue Plate BBQ Sauce that is cut with water or apple juice to thin it out. They used to sell it in the stores but now it is only available to the commercial restaurants in gallon jugs. If you call them in New Orleans they will direct you to a firm in Lafayette that will sell it to you. I have bought it from them before and they sell you four gallons since that is the case. Not a bad deal. I seem to remember it was about 10-12 a gallon and they UPS to me. I love it and need to buy some.
That said.
I don't measure just go for taste but use something like this.
bottle of ketchup, third bottle yellow mustard, steens syrup, crystal sauce, vinegar (white or whatever) salt pepper, garlic and onion powder, tomato paste in the tube. Maybe a little anchovy paste.
Just mix this up and keep adding until you get the right consistency. I normally heat mine and let it simmer on low to marry the concoction. Add whatever else you like. It is just kind of a base sauce but I like thin, vinegary sauces anyway. Add a little water to it if you want it thinner and have the right taste.
That said.

I like that bone suckin sauce somewhat and I thin it out.
I also buy a lot of Bodacious from Longview, Texas and thin it out as well. It's a good one but use the above recipe I gave as a start and go from there. It's pretty easy. I just never make the same one twice.

Do you use apple juice, water and/or vinegar to thin out the Bodacious?

The other day I was messing around with some limited ingredients. I combined Sweet Baby Rays, Sriracha, Soy Sauce, mustard, and a little vinegar and lemon juice. Spread it over some BBQ chicken and it tasted pretty damn good.

Blue Plate BBQ Sauce Concentrate used to be available from cajunsupermarket.com, but apparently not any more. I bought it from there twice, but it was very expensive, like $28 a gallon plus shipping. Instructions said to add 2 quarts of water and a pound of brown sugar.
Here is the ingredient list from the label:
Vinegar, Water, Sugar, Tomato Paste, Chopped Pickles, Soybean Oil, Mustard Seed, Salt, Paprika, Caramel Coloring, Garlic, Propylene Glycol Alginate, Spices, Artificial Coloring, Red Bell Peppers, Turmeric, Natural & Artificial Flavorings And Sodium Benzoate Added As A Preservative.
ETA: I once compared Blue Plate BBQ Sauce (thinned and sweetened) side-by-side with a quart of Dreamland Sauce I got from the founder of Dreamland, himself. The taste was almost identical.

1/2 cup Emeril's horseradish mustard
1/2 cup yellow mustard
1/2 cup sugar
1/4 cup light brown sugar
3/4 cup apple cider vinegar
1/4 cup water
2-4 Tbsp. Tony C's
black pepper
white pepper
1/2 teaspoon soy sauce
3 tablespoons butter
1 tablespoon hickory liquid smoke
3 dashes of chipolte tabasco
Mix all except soy, butter and smoke and simmer 30 minutes. Stir in remaining ingredients and simmer for 10 mo min.
I cook the pork in the slow cooker. Pull it out after about 7 hours, put it in a big bowl and pour the sauce over until well slathered.

I cannot believe I am letting this recipe out as it is very homemade. Does not start with store bought BBQ sauce as a base like most recipes do.
3/4 cup sugar
1/2 cup brown sugar packed
2/3 cup beef broth (double strength)
1 qt. hot water
2/3 cup mustard
1/3 cup vinegar
1/3 cup liquid smoke
2/3 cup Wrocesterchire
1 can tomato paste (12 oz)
1/2 tsp cayenne
2 Jalapenos chopped
2 med onions chopped
2 cloves garlic chopped
Add first 4 to boil, add rest and simmer 2 hrs uncovered on low heat.
