Baby back or spare ribs?

When I pick up ribs to throw on the smoker I always get baby back. My wife picked them up yesterday and when I went to get them out this morning, they were spare ribs...
I find spare ribs to be more difficult to get the membrane off and have much more fat on them.
I much prefer baby backs. Am I alone in my disdain for spare ribs?

All day.
To get the membrane off, use a sharp nice to separate the membrane from the bone on one end. Use a paper towel to grab the now cut membrane and pull in the opposite direction. Pretty easy.

Spare ribs have much more flavor. Higher fat content

Cut them St. Louis style. Here's a helpful tutorial
Trim the patches of fat off the top of the meat, but don't cut into the meat.

After doing a little research last night, i think you’re right. I didn’t cut them because I’ve never dealt with spare ribs before that weren’t already cut properly.

I started with the St. Louis ribs, but after trying baby backs, I won’t go back. At least the ones at Costco seem to have more meat on them.

i am historically a baby back fan but the last few times i've overcooked them
