Sadly I have pics 2 and 3 from that post on my SD card somewhere
My only problem with that place is they really nickel and dime you on the beverages.

I sub them out for fat in lots of salad dressings- slice them onto sandwiches in place of mayo, etc.

Halve you avocado, spoon in some good, cold chicken salad, sprinkle on some black pepper and enjoy.

I have a good recipe for this, too... + black beans, but have never grilled the avocados. Will have to try that. Just brush with oil, s&p and throw them on for just a minute or so?

2 cooked chicken breast finely chopped in a food processor
2 avocados diced in bite size chunks
The juice of 2 fresh limes.
Handful of chopped cilantro
Handful of fresh tomatoes diced- harder the tomato better.
Handful of diced purple onions
1 tbl spn salt
1 tbl spn cracked black pepper
Mix all ingredients roughly into a bowl. This makes one of my favorite lunch chicken salads. Absolutely delicious!
2 avocados diced in bite size chunks

There are a few varities of Avocados that will grow well in Texas and Louisiana. I had a Wilma Avocado tree in my yard in Texas before I moved to Denver.

We had 2 huge trees in our yard in FL and I grew up eating them. I just peel, halve, and add salt pepper and lemon juice and eat.

get some fresh shrimp. cook 'em up (i usually sling them on the grill.) let them cool while you mix a bit of mayo, lime/lemon juice, garlic, onion and a dash of tabasco. add the shrimp to the mix. cut avocado in half and then fill with the shrim mayo mix.
