Gone through many threads and many people stated peche was one of the best in the city. I didn’t feel that way. That was the main point I’m trying to really state. Take wait time out of the equations and I still think it is over rated.
I thought compere lapin was way better.

You said 2 hours for food. This is only 1.5 hours. And you started your clock the second you sat down??

Then you say you didn't order entrees until the apps arrived.

So AT MOST you maybe waited 50 minutes for food from the time you actually ordered it.

Everything a restaurant serves should be executed well, so I’m not saying your complaints aren’t valid. But there are some really fantastic dishes at Peche. Since you looked at old threads, surely you saw lots of suggestions/raves about the popular small plates and the raw menu? That’s where Peche shines and what differentiates it from other restaurants.

Comparing Peche to Compere Lapin seems odd because they are very different cuisines to me. Funny enough, Compere Lapin didn’t WOW me. But I’ve only been once and only had the one item I ordered so I can’t say whether it is rated appropriately or not.

I've never eaten at Peche, only had drinks and small plates at the bar and these excuses are very polite of you but, there is one intangible that you all are overlooking.

The staffing issue is not a new occurrence. You're acting like they were caught off guard by a sudden lack of able bodies. This labor shortage has been going on for a couple of weeks now so cut the B.S.

The restaurant had full control of the situation if they take the proper steps to mitigate the risks.

What a restaurant can do in these situations is control the door. You don't have to jeopardize the integrity of your brand by resorting to a turn-style at the front door. Two ways to do this.

1) Don't over book the restaurant: Limit service to RSVP only and FCFS at the bar. You don't have to let everyone in especially if it is going to cause problems. Memories over money.

2) Honor your RSVPs: and apologize to walk-ins. Cut down on the independent variables that can swamp the kitchen. Provide a limited menu to bar patrons and suspend to go orders.

It's not the restaurant's fault that they are understaffed in a pandemic but, there are strategies that they can employ to preserve their integrity.

FWIW, I completely agree that places should just not seat tables they don’t have staff for. However, let’s not pretend plenty of people wouldn’t run to Yelp and 1-star the shite out of a restaurant that turned them away with plenty of open tables. It’s a lose-lose.

You just have to realize that people that live in New Orleans & enjoy good food eat there multiple times a year.

An off day or night is certainly possible(especially during Covid. Though I’ve have 2 great meals there).

But overall I think people that eat their regularly can speak to the quality & consistency. You didn’t love it, ok that’s fine. But you at least deserved to be mocked for saying “I’m done with it forever” lol.

The wait time had already been embellished. An hour wait is not all that crazy. Which makes you wonder how much OP eats out and if he truly understands quality food

Just have your Host staff explain the situation and offer them a free appetizer on their next visit. We always kept these cards available as a "frick you" to people who would complain about he dumbest shite.

What's worse, pissing off your diners with poor service or pissing off someone who doesn't know how to make a reservation?

It is lose-lose as you said but, I think the person with the reservation is immediately more important to my business.

^ agree with all of this

It’s just a dramatic response to say you’ll never return to a place when they didn’t do anything overly offensive to you. I mean, I guess if he doesn’t live there and/or doesn’t go out often the response is less dramatic purely due to logistics. But writing the place off in protest just seems harsh.

Also. Not to fault the diners at all, but people who “have other places to be” like OP said tend to be inappropriately harsh at restaurants that are meant to be long, leisurely meals.

We have family members that don’t drink or do long dinners out, so they notice food timing way more than we do when we all get together.
