I have a collection of Shun premiere knives... they do a damn fine job for my amateur chef'ing around the house. Crazy sharp, hold the edge well, and yeah they look great.

I can tell you don’t know how to sharpen properly with how the blade arches up near the handle. Classic sign of mishandled knives

Just cheat like I do. Get a work sharp ken onion edition. I pull that thing out and it is easy mode to get any knife shaving sharp in a couple of minutes. Adjustable angles too. You just have to be careful with the tip because you can round off the point if you aren’t careful.

I sharpen all of my knives about every 6 months, and put the edge to a steel between uses. They stay as sharp as I need them too.
